Description Ruby Saltbush is a small shrub native to Australia. The plant has evergreen, semi-succulent leaves covered in fine white hairs, giving it a gray appearance. Small, insignificant flowers develop into 5mm fleshy berries that are bright red or orange when ripe. Fruit have a salty-sweet flavor and can be eaten raw or steeped into a tea. Leaves can be cooked like spinach. Ruby Saltbush is very drought-tolerant and can survive temperatures down to -6°C.
