Pattypan squash is a variety of summer squash that has a bright yellow, green or white skin and is shaped like a flying saucer with scalloped edges. The squash's flesh is most tender when it is slightly immature - the squash is usually harvested when it is 5-8cm in diameter. It can be baked, grilled, fried, or boiled.
