Iceberg lettuce grows in firm, round, glossy green heads. The interior is white and has a juicy, mild flavor. It is most often used in salads. Lettuce is cold-hardy. High temperatures will impede germination and/or cause the plant to bolt (go to seed quickly). Some hybrid cultivars have been bred to be more heat-resistant.
